Mini Tarts with Dates, Dark Chocolate, and Coconut Cream

Crust:

  • 1 bag Cookie Granola
  • 5 dates, pitted
  • 3 tbsp coconut oil
  • 1/4 tsp salt

Filling:

  • 100g dark chocolate, chopped
  • 2/3 cup coconut cream

Toppings:

  • Coconut whipped cream
  • Mini chocolate chips

Instructions

  1. Preheat & Prepare:
    • Preheat oven to 350°F and line a muffin tin with 12 liners.
  2. Make the Crust:
    • Blend the granola in a food processor until fine crumbs form.
    • Add dates, coconut oil, and salt; process until combined.
    • Fill each muffin liner 1/3 full with the mixture and pack it down with a measuring cup.
    • Bake for 7 minutes, then let cool.
  3. Prepare the Filling:
    • Heat the coconut cream in a small pot until scalding.
    • Place chopped dark chocolate in a glass bowl; pour the hot coconut cream over it. Let sit for 5 minutes, then stir until smooth. Let cool for 10 minutes.
  4. Assemble:
    • Distribute the chocolate mixture evenly among the cooled crusts.
    • Chill in the refrigerator for 1 hour.
  5. Serve:
